Another low calorie dinner for me: Chunky Mexican style salsa tortilla. Nice and simple.

Yes Judy, from this book below: Have made quite a few things and have enjoyed pretty much all of them. The recipes are generally for 2 serves which I have over 2 days.
I probably give out the wrong impression (that I'm on a diet). I'm not, but I eat light with treats now and then. That and my morning walks keeps my weight stable (around 53kg).
Got my book from a newsagency. If you get a chance, have a look through and see if it appeals.

Well, the sticky sausages were a hit, I have to thank you CC for the link to the recipe
We had it with rice (enough rice for the whole family recipe) with onion sauteed in the bowl first, then added steamed carrot, corn, & peas; + the extra sauce.
Kids have requested it again and DH said he enjoyed it lots too

You are very good Julie. I admire you. I try to be fairly careful but put on a couple of kgs each holiday and then don't lose it. I'm healthy though so I'm happy.
