Ha ha cookie. It will get to the stage where thereís virtually nothing else to do then we will become bored.  Iíve taken to only doing a major job every second day but that down day still goes so quickly.

Pork fillet schnitzel crumbed in crisp breads/parmesan with mashed cauli and broccoli.  I got 4 pieces from 1 pork fillet and cooked them all so that I donít have to clean the stove top every time!

LOL Chookie.  How did it fall, did it dance over to the edge during use?

K Atie with the basil you could make pesto and freeze it in ice-cube blocks. You can freeze basil, Google will tell you how.

I agree cookie, most boys wouldnít let their sister do that. Did their Mum know it was happening Chookie?

Nursing home adding a further 4 weeks to lockdown so now Iím wondering if Mum will even know me after the 6 weeks which could turn into goodness knows what.

I really enjoyed this Keto recipe https://www.myketokitchen.com/keto-recipes/keto-almond-biscotti/. Almond flour always over-browns in cooking but the taste is great.
I also made a batch of creamy veggie soup.

I went to the doctor on Monday and sat in my car until she came out to get me. We then went through the back door to avoid the waiting room. I had to have a blood test yesterday so couldnít avoid the waiting room then but I was there very early to avoid a crowd.  My veins are never willing to cop-operate with this procedure but Iíd had 3 tumblers of water beforehand and the lady working there yesterday was the best Iíve ever had.  She filled the 4 vials in no time at all and I heaped praise on her for her efforts.  In and out in no time thus not holding up others waiting.  I have to ring in a week or so re the flu shot, they generally hold a special clinic for this injection but Iím sure they will manage it well.  If and when the nursing home re-opens to visitors no-one will be allowed in if they havenít proof of having had their flu shot and we have to have it by the 1st of May.  Therefore I take it that they will not be re-opening in the near future.

I just had one toasted with butter & vegemite but it doesnít crisp up and Iíd rather have one of my bought low carb crisp breads Chookie.   It was quite nice with the berries & cream when first made but at this stage Iím trying all sorts of recipes just because Iím home all day and have the time.  I might just try reheating in the pan in which they were cooked rather than in the toaster which is what I do with crepes.  Iíll make a pizza using one as a base too so by the time Iíve tried different ideas of eating the 6 cloud breads I will or wonít bother making them again.

2 chicken kebabs and steamed veggies.  For dessert I used one of these, https://www.wholesomeyum.com/recipes/4-ingredient-mascarpone-cloud-bread-low-carb-gluten-free/
