CP - would using baking paper help? or perhaps on a rack so the warm air is circulating underneath rather than the lemons sitting on a hot metal surface?  -  Just a thought . . . .

CP, Don't know whether this will help or notl
 In an old CWA cookbook it has a section on fruit drying.  According to it oven temp. 45deg. C to 65 deg C. I dried the oranges in the dehydrator at 55deg.

I have a an Electrolux oven that has a defrost setting of 37. I've only ever used it to for rising bread dough.

CP i used a cooling rack in the oven  so the air could circulate around the lemons not just on a tray
i don't need a recipe i'm italian

The first time I tried I cut up 8 lemons and put 2 trays in overnight on 50 - but didn't do the single layer. This time i upped the temp to 125, 2 hours, and did the single layer. I need to find that happy medium.

Chookie's pumpkin & Wattleseed bread. Tastes ok, looks like a train wreck!

My first attempt at yoghurt went down the sink this morning, total failure. No more cooking for me today!
