Tomato soup from tin. Tried new loaf with it. Great. Small spring rolls.

Apple muffins - Nagi’s recipe. I hope they’re as nice as my usual blueberry ones, they were much fiddlier to make.

Thanks, I’ll check them out. I’ve been making the ones on my blog as they have lots of Apple and very little cake. Just enough to hold them together. They also have a little rum.

Crumbed chicken with roast potatoes & vegetable stir fry.  Soup again for me.

Yes Judy they are heavy on the Apples. But I have lots of apples that I’m trying to use up.
Chicken casserole that has chickpeas and couscous and added veggies.

The apple muffins went down well thank goodness. I’d still rather make the blueberry ones but if apple is requested I guess I’ll do them again 🙂

Judy, I also think Blueberry muffins are special .i also like a good savoury one. I’m at present making 1/2 recipes and baking them in AF.
Last night I had a small grilled steak and corn fritters with Sweet Chilli Jam.

DS Birthday today.  We are having a small roast beef with potato mash, baby carrots in honey, beans and asparagus.  We will have a full roast family lunch on Sunday.

Bought a small piece of pork leg and roasted it in the AF. It looked to be enough for 2 serves. In fact it will be 3 . It crackled nicely at 180. I added mashed potato, peas, mushroom gravy and lots of apple sauce. I saw a recipe for mashed potato , cheese and chive muffins. Might give it a go with the leftover potato.
