Sunday night was corn beef and all the veges, sauce.
Last night was roast pork and veges.
I also made fried rice for lunch today.

Grilled salmon, Sushi on the side,( posted). And stir fried veggies fron garden. Leftover Apple Cake Tart with TMX custard. I made the custard with the Mandarin sugar. Nice but could be a bit stronger.

Mich, there is one on the Forum called just Broccoli Soup that has potato in it as well. We love it, especially with a bit of grated Parmesan on top. Instead of cream, I use Light & Creamy evaporated milk or sometimes leave it out. both nice.

That frittata looks great Bedlam.
I made skinny mixers meatloaf tonight with roast potatoes, steamed peas, broccoli, peas, cauliflower, broccoli and fresh corn. There's only enough meatloaf for one sandwich left so I guess everyone enjoyed it. I also made chicken tikka to freeze in individual portions with rice for the kids while DH and I are away next week. We've also made lasagna and my mums curry chicken. It will be interesting to see if the eat the prepared meals or live at McDonalds

I made Chicken an d Mushroom Barley Risotto from "Something for Everyone". I added a bunch of baby spinach for added greens, it was yum
