I make this bread all the time for my highly allergic and intolerant 4 year old.  I love it!  So easy and it freezes so well.  He is very proud to go to Daycare on Sandwich day and have the same foods as the other children  :)

I have used potato starch, and it seems to work - not sure if it's got preservatives though...

I use a variation of this recipe to make my gf pizza dough - yummy and crispy!  :)

Jo could I make this in advance? I have a last minute party guest who is ceoliac and I want to make sure she has lunch! If I can do it today that would be great if not how soon before hand can I do it?

Thanks, Kerryn

Kerryn, you can make the pizza bases ahead & prebake them, then re-warm them in the oven (with toppings if using) when ready.
