About the eggless custard - I've done it at two demos so far. I make a dairy free, eggless custard, by grinding the rice (80g) then almonds or hazelnuts (50g), then add 500g water, 40g cocoa (or 1 tsp vanilla if you want vanilla), 100g Rapadura or raw sugar or 70g honey, and a blob of coconut oil (opt.), then cook as usual. Then pulverise again on speed 9 for 30 secs. (I think those measurements are right - must write them down!) If you want a dairy custard, just add more flour I think.
i had someone ask me if it was possibe to make this without the nuts. i'm thinking not, but if anyone has an egg, dairy, gluten AND nut free version please let me know
We used to get rice flour or arrowroot "custard" when we were children if we had an "upset" tummy - it certainly did get thick if mum put in too much arrowroot or rice flour - so you may need to experiment brazen - and may need some extra honey or vanilla to give more flavour?
That's OK. It's a bit of an education for those of us that arrived post medication being invented Just kidding But that is interesting - never heard of that before. Did it work?
