Yesterday I made Fish Piccata ‘all in one’ dinner., for lunch . I did purchase Skinnymixers new book Skinny Mediterranean. Also Lemon Prosecco Sorbetto ! Only added a bit of champagne, will add vodka and more Prosecco later on . It’s delicious and soft , doesn’t go hard in the freezer. Today it’s Baked Baklava Bites … hopefully they will hold together or I’ll need to use more honey next time , I always add less sugar than stated. As Cookie says the biscuit container had a massive leak . DH was opening and shutting cupboards- nothing .

I didn’t get to make everything I planned yesterday. I started the bread technique as set out in the Baker Bleu book. It is a very difficult dough to handle as it is so wet. I was tempted to put it in the TMX, but didn’t. I don’t like sticky hands!! It will be interesting to see if it produces a loaf with lots of holes. Marina, peach and tomato Salad. Cup of small tomatoes cut in half 2 small containers of diced peaches , well drained Few leaves of mint and parsley diced 1 teaspoon of lemon juice or similar Mix all together and add just before serving …… 1 cup blanched almonds browned slightly in a little oil and then add 2 tablespoons of sweet smoked paprika. ( the Spanish type)

Cookie, looks lovely. Last night , friend dropped in. We tested my new crumpets recipe. 1/2 Rye and 1/2 white flour SD crumpets. Result, crunchier crust with plenty of holes for butter and honey.

Judy, what a lovely time you have had. Sounds relaxing and interesting. Marina, I shared the Hummus as I was so impressed with the texture and flavour. My DD always said mine was the best, but it doesn’t come anywhere near this. To get it so smooth, I think they have removed the skins, but how they have smoked it amazes me. I can only think that after removing the skins that they have charred the chick peas. I noticed that there are black specks throughout the hummus. Thanks again.

Home from a 3 night getaway. Found my Nana’s cottage in Moonta and walked into an op shop in Maitland and there was a lady working in there who looked like my Aunty so I knew she was my cousin. We wouldn’t have seen each other for decades. We had a very enjoyable, relaxing trip and were impressed with the changes in these country towns. Nice to see you’ve caught up with Marina again Chookie. I saw the new Thermomix today for the first time. As we left this morning there was a Saturday market just around the corner from our lodgings so we pulled over and had a browse. The lady and I had a good chat, not so much about the machine but it does look nice and is bigger than I thought. One day maybe.

Glad you liked the hummus, Chookie, we go through heaps, it is made fresh each day and it is way better than any others that we have had - including home made.

Cookie, definitely stay away from Lune pastries. The Grand Hyatt is just across the road from the Lune shop. Very dangerous. There is a queue of between 20 and 50 people all day. The Hummus that Marina gave me was amazing. It was slightly smoky, silky smooth and with just a touch of lemon. Thank you Marina.
