Yes I do Hally.  I have a list of what's in there and sit down and work out meals that I can make around what I have.  It means that I still need to buy stuff in order to make certain things, eg tomorrow I'm making Jamie Oliver's Jerk Chicken.  I had the jerk cooking sauce frozen, so had to buy chicken this week (as I didn't have any left in the freezer) to use the sauce up.

Other days I'm using up meat and work out what to use it for.  I've also got things like cooked cottage pie where I only need to make fresh mashed potatoes for putting on top.

It's a good feeling when the freezers are finally empty, it usually takes 2-3 weeks, but then I can start filling them up again.  ;D

A freezer meal tonight - had a packet of excess Chicken & Leek filling and still have some filo pastry so a quick meal for us tonight and another gap in the freezer - still not enough of those though but I'm working on it  :-))
