Leftover Beetroot salad, slow roasted lamb, veggies cooked in the airfryer and babaganoush. It tasted so good I'm glad there was only enough for DH and I or else I would have just kept eating.

Airfried drumsticks marinated with homemade Percik paste - a coconut milk, tamarind and spices combo. Not bad 😄

BZB I wish you'd stop posting those photos of your delicious meals in your air fryer, or I shall find myself in the shopping thread again.  :-))

I made macaroni beef for the first time, although it didn't really follow the recipe. I'm trying to eat my way through the freezer so that I can defrost it, so I'm trying to use at least one thing from the freezer everyday until it looks like Gert's.
I have never cooked a dish with mince (apart from meatballs) without browning it first . I decided to try cooking the mince in the basket, so put the uncooked mince in the basket and set the machine going. I found that the sauce did indeed bubble through the mince,and the mince did cook. However, although I stirred it part way through the cooking time, the mince clumped together. I ended up tipping the mince back into the sauce and cooking it together for another 2 minutes to break up the lumps. I was just about to put the cheese sauce on top when I realised that I had forgotten the peas, so I just folded them through still frozen. I then topped it with a mixture of puréed cauliflower (from the freezer), bechamel and cheese.
I found it really filling and the kids loved it. We only ate about a third of it so have plenty of leftovers for another night.

I've marinated some chicken fillets in satay sauce I had in the freezer and cooked some rice for fried rice. I'll try cooking the chicken in the airfryer.

risotto tonight. With either be the standard mushroom or bolognese one depending on weather I'm able to make a quick trip to the shops for mince.

It depends which one I make Uni, if it's a basic one like mushroom then I do it in the TMX but if it's bolognese I do it in the PC.

I need to think which risotto is going to make the best arancini because I really want to try arincini in the airfryer and as we are only 3 at the moment I'll have enough left over. Hmmmm.....bolognese or mushroom arincini??
