What's for Dinner Tonight?

We like seafood too and should eat it more often, although we did have Panko crumbed silver whiting for dinner last night. Tonight I was at a bit of a loss of what to have for dinner as it's been so hot here and my motivation was low. I had some lovely chicken thighs fillets from our local farmers market in the freezer, so I made a stuffing in my Thermie. I mixed together some parsley and basil from the garden with the last bread roll, spring onion, provolone and Parmesan cheeses and an egg. I then flattened the thigh fillets and rolled them around the stuffing and encased them in bacon. I cooked them on the BBQ with some mushrooms and white zucchini and served them with salad. DD has asked me to make it again

A lovely meal for a hot day ES. It was obviously enjoyed by the family.
We had a roasted pumpkin, pasta, and pesto dish. I will put it up as it is lovely and easy.

ES that is a fantastic sounding "throw together".  MrsRC2B and I are finalising wedding foods etc (bloke comment now......... OMG.... how difficult is it just getting the foods right......... ) and one of the dishes we are going to have is the curried seafood dish by Jamie Oliver (being a Brit and all). Well Thermi got a night off but this dish was fantastic! Will post pics in a while not sure I can post the recipe / instructions though there might be rules about that )

Tonight we had Kezza's AWW glazed meatloaf.

I asked DH what he wanted me to cook him as a thank you dinner for looking after me after my surgery and he choose meatloaf (he loves meatloaf!). He said it was delicious and he's very happy there's lots of left overs stashed in the freezer for future lunches.

Your doing well to be back cooking already Katie. That meatloaf is delicious.

Today I slow cooked some beef in the oven using Karen's pulled pork marinade. We had it with coleslaw in homemade tortillas. DH has become quite the tortilla maker. He can get 16 cooked in under half an hour! Makes life easier for me.
