Freezing Potatoes
« on: February 07, 2012, 02:54:49 am »
I've accidentally grown about 30kg of potatoes.  I threw a couple of greens potatoes into an old compost pile a couple of years ago and this year they went mad.

In digging them up, some got split by the fork, have blemishes etc and will need using up quickly.

So my question is what is the best way to cook them so I can put them into the freezer for future use.
Thanks

I wish I could accidentally grow 30 kg of potatoes!

I'm not sure the best way for freezing them, I have found that boiled ones seem to go a bit gritty when frozen, but there has to be a good way of freezing them, otherwise we wouldn't have chips!!!

I dont know about potatoes on their own.

I freeze shepherds pie, casseroles, curries etc that have them in.

Maybe you need to have a cooking fest.

Lucky you, i have never tried potatoes.

A fast and easy way to clean all those potatoes at once is to put them on the top rack of your dishwasher and run a quick rinse cycle  ;D

Brilliant tip fundj, thanks. I'm going to give it a try 😃

Mashed potato freezes really well.  Freeze ice cream scoop size blobs to keep useable portions (open freeze on trays then transfer to a bag so they don't all stick together)

Also home made oven chips - parboil or steam for about 5 mins once it's reached steaming point. Allow to cool, then put some sunflower oil or similar in bowl together with any herbs or salt you want to use. Toss them in the oil then open freeze on trays before transferring into a bag.  They can then be thrown into the oven from frozen when you want chips.

These are the only ways I know to successfully freeze potato by themselves, other than as prepared stuffed potatoes of course (bake the potato, scoop out of skin and mash with butter, cheese, bacon or similar if desired, then put back into skin. Take out frozen potato and put straight into oven to defrost and melt cheese / crisp skin). Does anyone know of any other ways?

I've never thought to freeze potatoes so this is interesting.  Found this too.

Caroline that's great advice. I unfortunately don't have 30kg of potatoes
although it would be much easier on a busy evening to grab my homemade chips out of the freezer.

Thanks for the suggestions.

Never would have thought to clean potatoes in the dishwasher.  These aren't that dirty so just going straight to peeling.

Slowly getting through the mountain.  Today I'm making chips for the freezer, but have made shepards pie for the freezer, potato salads for BBQ, added mashed stud to sausage rolls.

I've put away the best ones in the cellar to later.

Have just read through this again. Hoping to freeze about 5 - 6 kilos of potatoes.
The link JD posted is very helpful.

I freeze potatoes every week, do the lot for the week in one go. I peel them then either steam or boil them (find steaming works better tho) then oil/butter/both them, freeze on trays not touching, once solid just put into bags back into freezer. Roast potatoes in a jiffy!  :)
Duchess potatoes freeze well and are nice, look good too. :)
Potato bakes freeze well, too.
Mash in pre-cooked sausages with cheese, bacon and tomato (or whatever you want) freezes well.  :D

When you do your potato, do you cook it first and then freeze?

Keiramax how did you go freezing all your potatoes?

I only do the steam and oil, then freeze. Can roast from frozen or thawed.  :D

Well thankyou astarra. I've made 2 potato bakes, 1 with kumara.
Frozen some potato for mashing, baking etc. Chips and am about to make some potato and leek soup.
Peeling potatoes is very relaxing.
