Did half of this recipe for the 2 of us for lunch today using 6 large prawns each.  Went down very well with DH who is not a lemon lover but I was careful not to put too much in the recipe, only using 1/2 a small lemon. We love Chelsea's prawn risotto risotto on the forum but these 2 recipes are different from each other so it is nice to have a variation of a theme.

This looks lovely JD and not at all gluggy like some risotto's including the recipe in the EDC!

Thank you LMT - the hardest part of making prawn risotto is making sure we both get equal quantity of prawns.  I have to count them to make sure we each have 6 in there somewhere  :D

JD when you halve risotto recipes do you simply halve the ingredients and do you reduce the cooking time at all?

I guess that sounds like a silly question but the one thing my demonstrator told me was to make sure I always use the correct proportions when cooking risotto.

In the past I've always made a big batch with the view of having leftovers......well, I'm sure there's never quite as much leftover as there should be.....
I think it's called portion control?  :-\

Berry, I halved all the ingredients, chopped the leek & garlic for 2 seconds, then followed the rest of the directions exactly as per the full recipe.

The QFITT Prawn and Lemon Risotto was the first thing I made in my Thermomix (apart from the vegetable stock concentrate which was made with my consultant) when the machine was delivered on Monday night.  I hadn't made a risotto in months as they usually require constant attention and can often turn into a gluggy mess.  I was very impressed. The flavour of this dish was lovely and it was oh so easy to make as the machine did all the work.  The only deviation I made from the recipe in the book is that I stirred in a little Parmesan cheese before serving. 5/5 from me.

I made a version of this again tonight, however instead of prawns I used chicken thighs.  I cooked them for a couple of minutes longer than the prawns and it was another great dish.  I missed the step on the recipe where you set aside the lemon zest and garlic but found out that the flavour of the dish was not compromised. Once again, I stirred in some grated parmesan prior to serving this dish,  Definitely another winner!

We loved this.  We made it with half prawns and half squid.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Made this last night. Omitted wine. Very nice but I think might add lesser butter next time.
