Wow! This sounds wonderful. More like a pot roast, which is a great way to do beef.

I ended up doing about 75mins and ended up with a beautiful medium (in some areas medium well) moist "roast".  I also loved that the I could use the wine and captured drippings so easily to make gravy.  Even my fussy eatter was eatting the medium cooked meat which surprised me.
