Anyone GF done the Cyndi O'Meara 21 day program?
« on: May 10, 2010, 01:10:34 pm »
i have a friend who is interested in doing the 21 day program, but she is GF.  What could she substitute instead of bread for the lunchtime meals?  She has told me she doesnt like gluten free bread, so is there anything else she could have instead?
Thankyou

Hi Em,
I'd suggest to go and have a look in the Special Diets section here for some alternative ideas. Also have a look at Brazens blog as a lot of her stuff is GF, so is QuirkyCookings and I think Tesibile as well...???

Hi Em.  Has your friend tried Cyndi's gluten free bread?  It is quite delicious and very different in texture to the gluten free bread's you can buy.  It's quite soft and moist and stays this way for a few days.  As it has eggs in it, it also has some extra protein - it's very healthy.  You can find this recipe in the gluten free cookbook, but I am sure that you could make this bread (as long as you have all the flours) without a TM.  It has quite a long list of ingredients, but once you've made it a few times it is very quick (love my TM here for this).  Has she got Cyndi's cookbook?  I am sure she could find some suggestions in there that don't rely on bread.  She could also contact Cyndi (on her website) and ask her if she has any suggestions - I have done this and they were very helpful. Hope this helps  :) :)

I've posted in on here too at least a week ago. Em you should have also been emailed a consultant version (similar to what I posted here grinding all the grains together) from your GL. If not I'll email it to you.

Quite possibly. I'd suggest that you got her onto using some quinoa, wild rice etc to really vary what she is having so she gets a good range of different proteins and nutrients.
