A batch of lemon and macadamia cookies, sweetcorn soup, a kidney friendly alternative to a tomato based pizza topping (not sure about this one as I haven’t made the pizza yet) and a batch of red capsicum, onion, garlic and shiitake mushrooms which is nice in an omelette, on a pizza, on toast or as the base of stews or casseroles. The soup was a kidney friendly recipe but it was horrible so I added a packet of chicken noodle soup to add some flavour and it then became mine not his😁

Yesterday I made a Weetbix Lemon Slice.  It's quite nice but very crunchy.

DD is on holidays at the moment so she made some chocolate muffins today. I sneaked one and they are delicious.
May all dairy items in your fridge be of questionable vintage.

Oh just went to the shops and forgot I have not one vegetable left … well potatoes and sweet potatoes . Now how am I going to magic up another meal out of nothing again . This always happens I get the cannot be bothered with meals etc and then the fridge is bare . Salmon mornay is an idea but not sure if I have tinned salmon. Could add eggs to that . But after not feeling well , I don’t think I could consume it either . At least there is leftovers for DH lunch .

Made a batch of cinnamon muffins ( cheats quick cook packet ) . These are for the Shearer’s, Crutching in the morning. Normally I get up early and make them and they like them freshly made . But DH said let’s make it easy and then I can go toasted sandwiches tomorrow.
