Without those basic ingredients on hand I would say your DS is definitely not a person who cooks Marina. You did well to serve them up a meal.

Well done Marina. A real challenge.
Today the Solar battery is being installed. I was having blood removed at the Pathologists when they rang. I’ve made them turkey Sausage rolls for Morning Tea. Also found some Hot X Buns in freezer.

Ha, when the inspector came to say ok it can be switched on, the electricians teased him by saying I made Sausage Rolls for them. I had to give him a pot of jam as consolation prize.
Today I made Zucchini falafels for visitors for lunch tomorrow. I’m baking a 1/2 leg of lamb and one visitor doesn’t eat red meat. I’ve also prepared Miso Eggplant. This is really yummy. Will put recipe up when I have a moment.
Bit mad this week, Im doing lunch tomorrow, lunch on Saturday and lunch on Sunday. Probably have a nervous breakdown on Monday.

What a hectic life, Chookie - you never stand still!!

I am looking forward to the miso eggplant recipe.

Cooked sweet potato and red lentil stew, pasta salad and roast veg frittata at the weekend.  I have started making up a jar of dried fruit / nut / seed mix to nibble on during the week.  I just use up what is in my cupboard and quite like having a nibble if I get peckish during the day ... I particularly like the miso almonds I found at The Source - I think perhaps I have put a few more of those into the mix than everything else  :-))

Marina I made RTE crackers the other day. They are yummy to snack on. I didn’t bake them rock hard as my teeth are a bit fragile. https://www.recipetineats.com/homemade-gourmet-crackers-with-cranberries/

Those crackers look really good, Cookie.  How long did you bake them to make them softer - 40 minutes?  45 minutes?
