I love the idea of soaking the fruit Chookie. I must try it.
I made RTE Chocolate Chip Cookies today. They are huge. They sit in the fridge for 24 hours. I can’t wait to try them tomorrow.

Soaking the fruit for the buns seems to be done by some of the specialist bakers. Mine was from necessity. The sultanas seemed dry. I also prefer Bundy rum for cooking. The white rum I use was a gift.
No cooking today.

Interesting recipe for Hot.  X Buns in the Age today. Almost the same as my recipe and method except for the paste made before hand. I’m going to try it today. I will continue to do the first kneed and rise in the bread machine.

I plan to make some sort of muesli bar/biscuit to have in the freezer for snacks as we have run out. I will do it this afternoon as it's going to be 33 here today. I thought summer had gone.

Helen Goh uses Tangzhong ( milk and flour cooked paste) in her Hot X Buns. It is a game changer. I tried the method and added it to my recipe. They were the best buns I’ve made.
I’m making chicken stock . Also pumpkin soup.

I’ve made more than 10 dozen bun now. All good except for last lot. Disaster. I forgot to add the fruit and tried to add after first rise. Rough looking buns. Not nice. I’ll use them in Bread and butter pudding.

I’m partial to bread and butter pudding.
These are RTE Choc Chip biscuits and the Pumpkin Fruit cake I made. Both delicious.

Had 3 friends over to cook, Hot X Buns. Made 64. First time I’ve used the 2 ovens.

Big cooking afternoon here. Batch of caramelised onion, caramelised garlic, pumpkin soup, caramelised bananas, cottage cheese mousse, Chookie’s quiche and cauliflower steaks topped with caramelised onion and cheese.

You have been busy Judy.
I made some condensed milk. I wanted to make a Caramelised Anzac Slice and didn’t have any.  I used the recipe in the Basic book.

I made some of Chookie’s Hot Cross Buns. I soaked the fruit in rum overnight. Some pita bread for dinner and Macadamia Anzacs.
