An interesting potato dish that my spud loving DH loved  ;D I think next time I would reduce the milk slightly to mash the potatoes as they looked a bit sloppy but it still tasted great :D

I've had Colcannon when I have been out and enjoyed it. Certainly something different to the normal mashed spuds.
May all dairy items in your fridge be of questionable vintage.

I made this last night. I followed CC's advice to use less milk. I found my potatoes didn't really mash a lot using the speed given. I wasn't sure if the potato should be mash so I left it sort of partially mashed. As it turned out it was very nice like that. With the cabbage it added texture.
I try to use less salt when cooking but decided to use the amounts given for this as potato without some salt is awful.
We really liked it and I will definitely make it again.

Cookie1 it sounds as though you have a copy of this book. How did you manage to get a copy? I would love to own this book but have been unsuccessful in my attempts to get a copy.

I was very lucky and a friend sent it to me from UK. It's a nuisance that we can't get them here.

Do you think it is improper to share a few recipes if we can't get the book here?
I understand it may not be ok but if we can't buy the book and we acknowledge the source would it be harmful? I Am not sure!

I've tried to see if there are any online but haven't been able to find any Boot. I thought there would have been something out there. Maybe people need to bombard our HO with requests, whether that would work is another matter of course.  I'm sure it would be a good seller here.

Yes I have also checked on line also for recipes or to buy the book!
I don't want to do the wrong thing but there are just a couple of recipes that CC and cookie1 have reviewed that I would love to cook.
Oh well I will just have to wait for HO!
