Recipes that use lots of eggs
« on: June 05, 2014, 12:43:54 am »
Egg production is outpacing egg demand here so I am looking for recipes that use loads of eggs. I have 3 dozen in the fridge (even after giveaways).

Some one mentioned a cake that uses 10 eggs? Would love that recipe please and any other favourites that use lots of eggs.

TIA
Gayle

Here's one using 10 eggs Gayle, not sure if there's one on the forum as I couldn't find it.

Swedish egg cake with wild blackberries...

1 1/3 cups flour
1/2 teaspoon salt
4 cups milk
10 large home grown eggs
3 tablespoons butter melted
Blackberry sauce (recipe follows)
Whipped cream

BLACKBERRY SAUCE
2 cups fresh blackberries
OR
2 cups frozen blackberries
1 tablespoon cornstarch
1/2 cup sugar

1.Preheat oven to 375º. Blend flour and salt with 2 cups of the milk. Add remaining milk to eggs and beat well, then add flour/milk mixture and beat until smooth. Pour melted butter into 9" × 13" casserole, then add egg mixture. Bake 45 minutes until top is golden brown and puffed. Serve with blackberry sauce and whipped cream.

2.Blackberry Sauce: Combine all ingredients in small saucepan and simmer until thickened (about 20 minutes).

Makes 8-10 servings.

;D ;D ;D  you, too, Gayle!!!  Luckily, I have a lovely neighbour who takes some, and then some to pass on.   Also give a dozen at a time to offspring when they're in Sydney . .
The EDC (earlier edition) recipe for Torte Caprese uses 6 and is a very popular cake with us.
The Magic Bean Cake uses 5   http://www.forumthermomix.com/index.php?topic=10643.0

Judy - have just seen your Swedish Egg Cake!  I'm taking note of that one, too!!  Thank you!! :-*

I think it's more like an oven baked pancake GF but I can't find a picture of a sweet one.

Here's a savoury one using just 4 eggs though http://semiswede.com/2011/11/18/aggkaka/

Angel cake uses lots of eggs, but it isn't very nice.  :-X :-\ :-\ :-\
Egg sandwiches for everyone for lunch. Savoury eggs to have with drinks. Ice cream and freeze the whites for later.
Sponges, which you could freeze.
May all dairy items in your fridge be of questionable vintage.

You could have Amy's mini quiches for tea, and then Blueberry and lemon friands served with lemon curd. That meal would use up close to a dozen eggs.

I usually make a huge vege slice, with a dozen.  Great for an evening meal and then cold for lunch.
I am amazed how long the eggs last as we also get inundated at times.

Lots of great suggestions here. My aim is to use up all the eggs by Monday morning (although I will get another dozen between now and then)

Thank you all very much :-* :-* :-*

The vegie slice also freezes well, so you can put them away for dinner for another night or an easy weekend lunch

Rice pudding or steamed custard uses a lot of eggs (about 7 eggs for 1.2 litres of milk)
