Silverside suggestions?

I have a piece of corned silverside that will fit in the TMX basket. I haven't been game to try coking a regular piece in tmx as I am generally cooking it to entertain with and I know I'm happy with my oven technique. So this is a test piece for TMX.

Does anyone have suggestions on how I prepare it. Being that it fits in the basket does it need the varoma? Would it boil or steam in the jug.

Have you seen this recipe Thermesa?  If your piece is smaller and fits into the steaming basket, then by all means use that.

Thank you JD. I think I'd seen it when my meat was too big. Might reduce the water content so I don't get a flood.

I thought today's pickled pork fitted the basket. Didn't factor in enough swelling. Turned tmx into a pressure cooker and currently sitting under a tap in casualty. Ouchies

Oh Thermesa, that's no good, I have cooked silverside in the varoma I have even done it in the bag that it came in ,nice and moist , when it comes to the boil you should turn it down to a gentle steam  if it is in the basket inside.

I use Tenina's recipe. It's delicious! If you have her first book, it's in there.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Loaded up on painrelief now. Will know more tomorrow about how much impact it will have on my working week.

Thermesa that is awful. I have heard of it happening. I hope the damage isn't too severe.

I do happen to need a green seal but it wasn't the seal at fault. My own stupidity. Much better today. Thank you.
