Tofu Vegie Burgers

Tofu Vegie Burgers

Ingredients

40gms walnuts
1 large onion chopped in quarters
1 clove garlic
1 large carrot peeled and chopped in chunks
2 tbsp tomato paste
35gms wholemeal flour
1 tsp salt flakes
1 tbsp of curry paste or powder
2 tsp of ground coriander
225gms firm tofu

Method

* Preheat oven to 180
* Place walnuts in  *: and chop finely sp 6 for 4 seconds - set aside
* Place onion, carrot and garlic in  *: chop sp 7 for 5 seconds or until a medium dice
* Cook on 100 for 4 minutes or until soft
* Add tomato paste, and curry and cook for a further 2 minutes on 100 - allow to cool slightly
* Add the flour, tofu, walnuts and salt to the cooled vegetable mixture and combine together  :-: sp 3 for 5 seconds
* Gently fold in any of the ingredients that haven't fully been incorporated
* Shape into patties (this is a soft mixture) and place on a tray lined with baking paper
* Cook for 10-12 minutes each side or until browned

This recipe was converted from Simple, Tasty, Good cookbook
I added a cup of cheese to mine as I'm not vegan and added extra curry powder

I made these tonight. Used my homemade red curry paste from the EDC.
They are excellent - very tasty and cook perfectly with a lovely crisp outside.
Thanks very much for this recipe - it will be used often.
