Dried Cherry and Almond Cookies

Dried Cherry and Almond Cookies
Makes 20 -30 biscuits
Ingredients
110g  unsalted butter, softened
100g sugar
1/2 teaspoon vanilla extract
1/2 teaspoon pure almond extract
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 large egg
188g plain flour
3/4 cup sour dried cherries
1/2 cup blanched almonds, chopped and toasted
Preparation
Set oven to 180 degrees.
Place butter,sugar,vanilla and almond extracts, cinnamon, and salt in bowl. Beat on speed 3 for 1 minute. Scrape down  and repeat.
Add egg and mix in on speed 3 ,10 seconds.
Put into a bowl and gently stir in the flour , then the chopped cherries and almonds.
This can be made into a roll about 30cm long and chilled for at least 2 hours. Then sliced into discs and baked for 15 minutes.
I actually just put blobs onto a tray and baked them, as my dough was very soft. I think my conversions from American measurements weren't too good. I think I have fixed it.

I have all those ingredients Cookie so have earmarked this one for when the cookie jar is empty.
