Name of Recipe:Stuffed eggplants
Number of People: 4
Ingredients:
Onion 60g
Oil 30g
Garlic 20g
The flesh of 2 eggplants, mine eggplants weighed 800g
1 tablespoon of veg stock
1 MC peas
2 MC frozen spinach
½ teaspoon of cumin
1/2 MC grated parmesan cheese
1 tablespoon of roasted pine nuts
100g of fresh soft bread crumbs
Preparation:
Chop onion and garlic for a few seconds, scrape
Add oil
Cook for 5 mins on varoma on soft speed
Add eggplant flesh ,veg stock ,peas, cumin and spinach ,cook on varoma for 5mins on speed soft and on reverse i went to speed 2 just to move things around for a few seconds then back to soft speed
Add grated cheese, pine nuts and the bread crumbs
Knead a few times or mix with spatula. Remove from bowl
Add 1.5 of water to bowl set time for 30mins on varoma any speed for now
Stuff the eggplants and place in the varoma and turn speed up to 4, i steamed mine for about 20 mins
Only 3 fitted in the varoma, i steamed the 4th one on its own for 10min
When ready to bake add some nap or bol sauce and cheese on top and bake for 15 to 20 mins depending on the temp and size of the eggplant my were at room temp and only took 20min
