Maddy's Oven Baked Honey Soy Chicken breasts
« on: September 14, 2012, 08:24:08 am »
Thought I would put this here so that it will be easy to find down the track.  See maddy's photo and marinade recipe below.

I used this marinade. http://www.taste.com.au/recipes/24518/soy+honey+and+ginger+roast+chicken
But used chicken breasts instead. Best flavour is to marinate for a few hours, but I left it overnight.
I cooked them the usual way I cook breasts, which is:

heat oven to 190c.
heat 2 Tbsp. rice bran oil in a fry pan on medium-low heat, fry breasts 3 minutes per side.
transfer to an oven tray, and bake for 10-12 minutes (depending on how thick breasts are), once finished cooking, lightly cover with foil and rest for 3 minutes.

Thanks JD, I'll pop the marinade recipe here, as they sometimes disappear off taste.

Honey/soy marinade:

1/3 cup soy sauce
1/4 cup honey
3cm piece fresh ginger, peeled, finely grated
2 garlic cloves, crushed
1 teaspoon sesame seeds
4 chicken breasts or marylands (I prefer breasts)
Baby Asian salad greens or noodles to serve

Pop all into a glass or ceramic dish, mix and coat chicken.  Marinate for at least 2 hours.

To cook the chicken:

heat oven to 190c.
heat 2 Tbsp. rice bran oil in a fry pan on medium-low heat, fry breasts 3 minutes per side.
transfer to an oven tray, and bake for 10-12 minutes (depending on how thick breasts are), once finished cooking, lightly cover with foil and rest for 3 minutes.
Slice chicken  and serve with your choice of sides.

Did you use skinless chicken breasts or skin on Maddie?

Lovely and golden which is how I like them.

Will cook this soon as it looks delicious  :)

no skin...but leaving skin on would work the same.
I left mine to marinade overnight, so was full of flavour.
I  reserved the marinade, and cooked in the wok before adding the veg to it.

Going to prepare this today for cooking tomorrow.

It looks delicious.

I always use skinless chicken breasts. Was unsure as your chicken looked so golden on top  :)

Thanks for sharing, this now pops to the top of things I want to make this week. If only my kids ate things like this I wouldn't need to figure out something else for them.
