That link isn't working for me.

I actually like the recipe in the In the Mix book, but I guess Fee's is good if you only have a few quinces on hand.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I agree courton. And, did you know if you cook it for only 45 minutes then leave it in your insulated TMX for 2 hours longer it turns a deep ruby red? I guess the same would happen with Fee's too.

I read one of the forum members mentioning that if you leave the cut pieces out for a while (30 mins) it gives it a chance to oxidize and turn red. Another option.

What do you mean by insulated TMX?  lid closed?  Or put in thermoserve?  I've made the In the Mix quince paste twice with great success.  LOVE it - no more burn splatters on my arm (& dog)!!.  Don't have Devil of a Cookbook yet but will check out the link.

Marabel, I mean that you cover the whole thing with a towel.

My TMX is already in my sink with padded towel underneath. I put another towel on the top and leave it for 2 hours.

I made the Quince paste on the weekend and ended up after cooking for 90 mins with a pink mess:)
Waste of money, time and effort?

So I've bought some quinces to make the quince paste from Quick Fix in the Thermomix but I'm not sure how to go about preparing them. Do I leave them as is and cook (which I have just read on the web) or do I peel and how do I do that?

I peel mine first with a veggie peeler or a paring knife.
They are sometimes a bit difficult to peel so take your time.
I then take out the core and pips.
I also use thermomixers quince paste recipe sometimes.
I also cook my quinces over night in the slow cooker with out sugar.
In the morning I put into thermomix with sugar and cook according to directions.
Good luck the paste is great with cheese.
