Hi everyone - good to hear you sounding happy Uni, but keep resting and taking it easy - I know that that is easier said than done, but I think you are getting the message from everyone here (and, I am sure, from everyone at home as well) that it's the best thing to do.

Your cake sounds a bit of a challenge, CC, but the name alone is making my mouth water!

Good morning everyone.
I love the Carribean Carrot Cake CC. Wonder why it took so long to cook?

Good to see you're on the mend Uni.

It's lovely Uni, one of DH's favourites.
My oven runs a bit cool so I cook at 185 for just under an hour.

Uni, I hope you're feeling better now.
I know how awful it can be to have a fall, as I had one last year and I was lucky that
I didn't break anything.
Take care of yourself :)
