OK, here is my attempt at cupcakes....  I made a couple of Maddy's musk stick flowers as well but I think they are a little oversized for the mini-cupcakes (mine aren't as pretty as Maddy's either!).

Made a 1/2 batch of this today and made little cupcakes.  They are yummy.  I've whipped up a batch of the creamy vanilla frosting as well so will attempt to ice them before taking them along to our bushwalking supper tonight (hope the icing survives as it is still pretty hot outside).

Just whipped up some of this frosting to go on some cupcakes.  It's in the fridge now and then I am going to attempt to pipe it onto the cupcakes.

No time like the present.... I happened to have the ingredients for these so decided to make them for dinner tonight.  I only made a 1/2 batch and put the entire mixture into a slice tray rather than make individual muffins. 

Now I know why these are a favourite with forum members.  Really nice Amy and so quick and easy to make.

Amy, these brownies will definitely be made again.  In fact, I've already decided next time i will try the Turkish Delight ones.  Might have to wait to next year though.

Welcome to the forum Tracey. I too have that problem - too many great recipes to try, not enough time (or meals) to cook them.  My 'to do' list just keeps getting bigger and bigger.

Welcome back! I can definitely relate to the TMX cooking contributing to eating the wrong things.  I've only had my TMX for 2 months but in that time I've cooked way more desserts, cakes and biscuits than I have in the past 5 years. The problem is that everything is so easy to make with the TMX.  The good news is that I've only had take-away once since getting Thermie and I'm cooking things from scratch rather than relying on store bought goods loaded with preservatives and other nasties.

I made these brownies tonight - did a choc chip variation (using only dark and milk choc chips cause that is all I had).  Unfortunately I think I may have overcooked them as I got distracted when they were in the oven.  I have had one (OK, two) straight out of the oven and they are delicious but more of a cake consistency and not very fudgy.  Regardless, they will be eaten and are much better than my last lot of brownies which were completely undercooked.  Occasionally I get it right  :)
