That loaf looks tasty Gayle. Did you put lots of seeds etc in for the muesli 'stuff' ?I'm quite taken with this recipe Cookie. It's a small, heavyish loaf but It's so versatile and consistent. I've made it many times and I don't think I've made the same loaf twice. But they have all disappeared very quickly. Ones with dried fruits, nuts, seeds are lovely toasted with jam, or with banana, cinnamon and honey on top. You can sub water for most of the milk it seems. The latest one just had sunflower seeds and pepitas with hardly any milk (the fridge was looking bare lol) and it was nice with scrambled eggs, tomato and spinach. I can't remember if I have put coconut in any of the loaves and I just put a tiny pinch of salt.
