This is a regular in our house too. My boys love it with feta sprinkled over the top. I don't always use mint but always include the coriander.

My consultant was turbo happy so it was more like relish. Didn't float my boat :/ perhaps I need to do it.

I made this today. Omitted the onion and coriander because I want to keep it in the fridge for a few days. Really impressed with the flavour and will definitely make in the future. Hoping it lasts 3-4 days to be taken for work lunch.

I always add approximately a 2cm piece of fresh ginger also. It adds an extra depth of flavour. :)

Haven't had this salad in a very long time. It was my staple work lunch alternating with feta or a tin of tuna.
