Adding oil to any bread recipe will make it softer and will keep fresh longer. Also will toast to a nice brown. 1 dessertspoon to 500 g of flour should do the trick. However, given all that, the No Fuss recipe is pretty versatile without the oil.
Pizza base, I always us the recipe on the Forum for the thin and crispy pizza base. It’s a beauty. Makes 6 medium sized bases and you can use it straight away or keep it for a couple of days in the fridge in an oiled bag.
I prefer a hot oven. The cold start was aimed at saving power.
Kneading, when I make bread by hand I knead for about 20 times or more. The TMX is very efficient and 4 minutes is plenty.
Another tip is to use digital scales. I don’t trust the TMX scales.
