Apple & Avocado Salad

Apple & Avocado salad - serves 4.

1 Granny Smith apple -  peeled, cored and cut into quarters.
1 small avocado - peeled and stone removed
1.5 tspns apple cider vinegar
2 leaves iceberg lettuce, finely shredded.
S & P to taste.

Place the prepared apple into the TM bowl and chop 1 sec/speed 5. Remove to a small salad dish.
Place the avocado into the TM bowl and chop 1 sec/speed 5. Place it into the bowl with the apple.
Sprinkle the apple & avocado with the vinegar and toss to distribute it evenly.
Add the shredded lettuce, S & P and mix through the apple & avocado.

This recipe is best made just before serving and the whole quantity used as it will go brown if left too long.
However, if you read further down, you will see where I was able to prolong the colour by spraying the salad with olive oil, covering it and refrigerating it.

It's certainly different and adding pasta sounds like a good idea Marina. Perhaps some chicken too for non-vegetarians.

I left a couple of servings rather than eat the lot which we could have quite easily done as I wanted to test out one of the hints which was in the link CP posted yesterday.  I sprayed the leftover salad with olive oil, covered it and 3 hours later it still looks the same colour whereas it went brown in an hour when I made it years ago.

Here's a photo taken 4.5 hours later, colour still looking good.  Spraying with oil is a great tip.

Avocado and apples are so unappetising to look at once they go brown!I  've just downloaded that link that CP gave us yesterday and it looks like a couple of us have tried some of the tips so far and they seem to have worked.  That's good news.

Thanks for all the experimentation Judy. My mob don't eat avocado so I will get to have it all for me.
