Lemon and Herb Sauce for Fish

Ingredients:
1cup fresh coriander
1cup fresh parsley
2 garlic cloves
1/2 cup lemon juice (I use juice from 2 lemons)
Rind from one lemon
1 fresh red chili


Method:
Add everything to the TMX bowl
Set to closed lid position - with MC on
Blitz on turbo three times, until a paste/dressing is formed

Serve this by drizzling on top of cooked fish. Its especially good for families, as you can leave the dressing off the kids food, but enjoy the herbs and chili for yourself.

thanks mel. can I ask if you mean 1 cup of chopped coriander & parsley or do you generally mean a really nice big bunch of each?

I just guestimated what a cup would look like when i was cutting it from the herb garden. I didnt chop it, just threw it straight in and let the TMX do its magic. It was about half a big bunch that you would buy from the supermarket. I did try to weigh it when i put it in, but it was coming up with zero!!! This is the kind of recipe that any amount would work, and different combinations of herbs too. I think next time I am going to try this using a lime juice and rind (no coriander).

My parents hate herbs and chili's but both really loved it. I served it ontop of a whole baked blue eye cod, and we couldnt rate this highly enough!
