Very EasyIngredients:
Base:
100g butter, softened
60g brown sugar
190g Plain flour
1 extra large egg yolk
Topping:
2 extra large eggs
160g brown sugar
1 teaspoon mixed spice
50g SR flour (or 50g Plain, 1/2 tsp baking powder, 1/4 tsp cream tartar, pinch salt)
35g cream
80g raisins
140g figs -
1 sec, Speed 585g pistachios -
3 sec, Speed 5120g walnuts -
1 sec, Speed 5icing sugar, sifted, to serve
Method:
1. Preheat oven to 180
oC, and prepare slice pan 28 x 18cm.
2. Chop figs, pistachios, and walnuts either by hand or TM - set aside together.
3. Add butter and sugar to TM and melt together for
4 mins, 100o, Speed 1.
4. Add flour and egg yolk, and mix
20 secs, Speed 5.
5. Press into slice pan and bake for 10 mins.
6. For topping: mix all the ingredients together (except icing sugar) for
1 min, Reverse, Speed 1.
7. Pour over base and bake for 20 mins, or until golden and firm. Remove and cool in pan. Dust with icing sugar and cut into squares to serve. Store in an air-tight container for 2-3 days.
Variation: Use any combination of nuts, or use sultanas and dates for the fruit.

members' commentscookie - CP63 these are really lovely. I made them yesterday and they are nearly all gone. They must be healthy as they have nuts and dried fruit in them.
