Linseed Bread (with photo)

After hearing about the great qualities of linseed such as lowering LDL, stabilizing blood-sugar levels...etc I decided to prepare some recipes with linseed. This is the first time that I actually used it, nevertheless I liked it a lot




Ingredients:

200g water
20g fresh yeast
15g honey
200g flour
250g wholewheat flour
20g extra virgin olive oil
5g salt
50g linseed
1 tbsp anise seeds


Preparation:

    * Put linseed and some water in a bowl. Allow to soak for 3 hours in advance


    * Warm water for 1 minute at 37°C on Speed 1
    * Add yeast and honey and mix for 4 seconds on Speed 4
    * Add flours
    * Add well-strained linseeds into TM Bowl
    * Add anise seeds, oil and salt. Knead for 4 minutes
    * Put it in a deep bowl, cover with plastic film and let it rise for 1 hour


    * Place some baking paper in the oven tray. Brush with a little oil on the top
    * Oil also your hands a little so that you could work better
    * Give it a desired shape. (I just made it simple loaf shape). Let it rise 1 hour

did you mill the wheat yourself? if so 1 min, Sp 9? will wait to hear from you as I might make this tomorrow.

Just a note about the "linseed" ingredient.

Here in the US and I think in Canada, it is called "flaxseed"  as is the cold-pressed oil intended for food use.

This was done several years ago to distinguish the product from linseed oil for art and industrial purposes and which is poisonous. 

I keep the "golden" flaxseed and the commercial meal on hand for adding to all kinds of dishes, even adding the toasted seeds to salads.
It has to be kept in the freezer because it rapidly becomes rancid and the taste, once it has "turned," is awful.

It is an excellent addition to the diet, even if you have no health problems.

Do you think I could replace the anise seeds with something else?

The bread looks lovely and healthy.

I heard that some mill in Thermomix, I just didn't try

I heard about flaxseed oil but never used myself
Putting toasted seeds in salad is a great idea
How do you toast them? You do it simply in a pan as you do with hazelnuts for example? Do you need to soak them into water beforehand?

Cookie you can replace them with fennel seeds I believe. It would taste similar though
If you want to replace them because you don't like that taste, you can use pumpkin or sunflower seeds as an alternative

If I'm toasting a very small amount (a tablespoon or so), I put them in a small dry skillet on the stovetop and keep stirring them until the first one pops, then i immediately remove them from the heat. 

If I need a larger amount, more than half a cup, I put them in a pie tin and into the oven preheated to 180° C, for 5-6 minutes, stirring every couple of minutes.  If they are very fresh, it will take a bit longer.  You can tell because the aroma is distinctive - or it is to me.

Once toasted they must be used within a couple of days or must be frozen because they break down rapidly.  I have a recipe for flaxseed crackers and I make only half the recipe because the crackers will simply not keep because the seeds rapidly become rancid and the taste is not at all nice.

Andie, I remember painting the fences and my cricket bat with linseed oil - don't think that it would make good bread.

I have this rising at the moment. I have never soaked seeds before and I was wondering if I should rinse the linseeds after soaking? They sort of went gelatinous. As I wasn't sure I gave them a bit of a rinse and so far the bread is looking good.

This is a lovely bread farfallina. I added some sunflower seeds instead of the anise seeds. I also milled my own whole wheat flour. I felt very good about it being so healthy. I forgot to take a photo as I was cutting it up for the freezer late last night. I will endeavour to do so when I have some for lunch.

The bread is delicious,even though the photo shows it bent over the bowl. :-))
