Chai Tea Recipes

These recipes were from a website (www.cathasspices.com) back in 2006 which now seems to have disappeared.  I think there must be as many family variations of spices and quantities as there are cups of tea. . . it's just a matter of experimentation and personal taste! :D

Basic Chai Tea  - (serves 2)

2 cups water
1 Tablespoon of black or green tea leaves
1 Tablespoon honey
2 teaspoons ground cardamom
1 1/2 teaspoons ground cinnamon
6 whole cloves
small pinch ground ginger
1 cup milk (optional)


Put all ingredients except the milk into a suitable saucepan.
Bring to the boil and simmer for 1 1/2 minutes
Add the milk, baring back to the boil, and simmer for a further 30 seconds
Strain and serve

Chai Tea - No. 2 - (serves 2)

2 cups water
1/2 cinnamon stick
9 cardamom pods
8 whole cloves
4 teaspoons sugar or honey
3 teaspoons black tea leaves
1 cup milk (optional)

Put all ingredients, except the milk, sugar and black tea, into a suitable saucepan.
Bring to the boil, turn heat down, and simmer for 6 minutes.
Add the milk, sugar and tea leaves, bring back to the boil. and simmer for a further 30 seconds.
Let stand for 2 minutes.
Strain and serve.

Chai Tea No. 3 - (serves 2)

2 cups water
1 cinnamon stick
10 cardamom pods
6 whole black peppercorns
6 teaspoons sugar or 1 1/2 tablespoons honey
3 teaspoons black tea leaves


Put all ingredients, except the sugar and black tea, into a suitable saucepan.
Boil for 5 minutes.
Add the sugar and tea leaves, bring back to the boil, and simmer for a further 30 seconds.
Let stand  for 5 minutes.
Strain and serve.

Chai Tea No. 4  -  (serves 6)

7 cups water
4 teaspoons fennel seed
1 1/2 cinnamon sticks
8 cardamom pods
8 whole cloves
2 bay leaves
1/2 teaspoon ground ginger
1/2 teaspoon whole black peppercorns
4 Tablespoons honey
2 Tablespoons black or green tea leaves
1 cup milk (optional)

Put all ingredients, except the milk, and black tea, into a suitable saucepan.
Bring to the boil, turn heat down, and simmer for 6 minutes.
Add the milk and tea leaves, bring back to the boil, and simmer for a further 1 minute.
Let stand for 4 minutes.
Strain and serve.

Chai Tea No. 5  -  (serves 6)

7 cups water
3 star anise
2 cinnamon sticks
6 cardamom pods
6 whole cloves
2 bay leaves
1 teaspoon fennel seed
1 teaspoon ground ginger
1/2 teaspoon whole black peppercorns
Small pinch fenugreek seed
2 Tablespoons honey
2 Tablespoons black or green tea leaves
1 cup milk (optional)

Place all ingredients, except milk and tea leaves, into a suitable saucepan.
Bring to the boil, turn heat down, and simmer for 6 minutes.
Add the milk and tea leaves, bring back to the boil, and simmer for a further 1 minute.
Let stand for 5 minutes.
Strain and serve.

Thanks GF I love chai tea. I need to make it more often when home as when out it's always too sweet as they use syrup.

I see T2 has lots of chai tea at the moment. We bought some jungle chai.
They even have chai tea sets so that you can make all sorts of chai. The spices that they use are all things we have in our cupboards. Kind of like GF's recipes.
May all dairy items in your fridge be of questionable vintage.

I love the taste of chai tea, but the last time I had some at the Subiaco markets, my stomach did not.  I have cut milk out of my diet and my stomach is thanking me for that.  Do you think I could use almond milk as a substitute?

Hi Kezza, you could try and see if the almond milk works.... or just leave the milk out altogether. Would be interested to hear how you go....

Thanks for posting Goldfish, i can smell them, just reading it.
We have been enjoying the arcadia spice mix with lactose free skim milk.  Heat to 70C speed 4 and then a few  seconds on 7 to froth. Better than a cafe.  It s quite sweet but a nice evening treat.

If only I could just try them all. I love chai tea. Unfortunately it's hard to find a good Cafe that makes them and when you do if you are like me you go no where else for breakfast lol. And then you buy the brew from them and drink it every day. Which one is your preferred GF?

Thanks Goldfish for posting these chai tea. I can't get used to the milk base - just had never thought of leaving it out  :-))

Have been trying different herbal infusions and enjoying them, so will try a milkless chai. Have just had our first rosella tea infusion and enjoyed it, so will dehydrate some rosellas to store for tea. Live winter for all the hot drinks.

I had a chai latte yesterday in the central market made with tea leaves from Tbar (shop specialises in tea) & it was lovely. ElleG I made the version from a Quirky Cooking book using cashew nut milk as the base & it was good too.

Thanks GF for post this.  I love spices but have never had Chai tea.  I recently made some biscuits with Twinings Lemon Twist tea ground.  Might make a Chai version.

Was given some T2 Chai for Mothers Day so had a crack at using it with Almond Milk.  I usually use unsweetened almond milk in my smoothies, but picked up an original one by mistake.  Used this for the chai because I knew it would be sweeter.  I heated the milk in microwave, and took the infuser out of my tea pot.  I placed the tea in infuser and placed it in with the warmed almond milk and left to infuse.  It was lovely and it definitely didn't need honey.  Next time I will try with Unsweetened almond milk.
