You can definitely put fillings in the dough - whatever will go well with green tea flavour -- I would use red bean paste -- as green tea ice cream in sushi restaurants is usually accompanied with azuki red beans.

I don't have red bean paste or lotus paste on hand so I decided to just eat them plain -- which is good enough :)

Green Tea Steamed Buns
425g All Purpose Flour
75 g Wheat Starch (You can also use Corn Starch)
30-50g Green Tea powder – depends on how strong you want your green tea taste.
A pinch of salt

Pulse the above ingredients on turbo a few times to mix – then add in the following
40g sugar
2 tablespoon yeast (I used instant yeast with added ascorbic acid)
30g grapeseed oil
270g Water

Put on 37 degrees mode – and knead mode for 5-6 minutes.
Take out dough – roll into a long dough – cut into many buns.
Line the buns on parchment paper on a steamer to prevent sticking – you don’t need to oil the parchment paper as you can peel them off before eating.
Let it rest for 30 mins before steaming

Steaming time usually takes 15-20 minutes.

Note: Usually I will replace 100g of the water with milk - it tastes better but a member of my family is lactose intolerant -- so I omitted the milk.

My table was rocking when the thermomix was kneading the dough -- I dared not move away from the table for fear it would topple over as well!

The dough is doing it's first rest as I type :)
