Name of Recipe:Easy Coconut, Citrus Pie
Number of People:12 servings (small slice as quite rich)
Ingredients:
220g raw sugar
rind of 1 lemon, 1 orange and 1 lime (no pith)
100g slivered almonds
4 eggs
100g unsalted butter
45g desiccated coconut
200g lemon, orange and lime juice (combined)
200g coconut cream
60g plain flour

Lightly whipped cream and fresh passionfruit pulp, to serve



Preheat oven to 180°C.

Place the sugar and rind into TM bowl. Mill 5 seconds on speed 8
Add slivered almonds. Mill for 3 seconds at speed 6
Add rest of ingredients.
Mix for 30 seconds on speed 4
Pour into a buttered 28cm pie plate.
Bake for 1 hour until lightly browned. Set aside to cool, then refrigerate for 1 hour to chill.  (tastes great warm too but better cool)

Tips/Hints:Based on a recipe I have often used from www.taste.com.au
For the rind used medium orange and lemon and small lime.

Have just converted and made in THX for the first time hope you enjoy as much as us.

Will find a recipe for Moroccan Tagine and give it a go - thanks  achookwoman.
Judydawn - will try your recipe tomorrow night.
Have only had my thermomix for 25 days but am cooking lots, even tried the pizza scrolls. Have them in freezer, will cook for lunch tomorrow.
Can't believe the bread, made lots. Anyone want a bread machine? Its in the back cupboard now.
Not doing much with the Veroma yet, only one meal - salmon fillets.
Love the leftovers, can make more meals by just adding a few extras.
This machine is saving me lots of money, not buying anything except basic food no additives.
Even making my own icing sugar and baking powder.
Even though it's really cold here of a night have made lots of strawberry dreams, great for dessert.

After 2 failures, my fault, great success. Have made this week -
  3 lemon and 4 orange and poppyseed cakes
  Mushroom risotto
  Risotto rissoles
  Hommus
  2 strawberry and 1 pineapple sorbet
  2 strawberry fruity dreams
  2 VSC
  litres of pumpkin soup (no failures after using VSC)
This afternoon making Torta Caprese and probably another orange and poppyseed cake, why all the cakes? grandkids.
Then something for dinner

Thanks Judydawn - this forum is so big - hadn't got to that bit yet, going to make risotto cakes right now
also thanks Cathy, will try this too.
There is so much to learn! But this is really fun, cant seem to do anything but cook at the moment, will have to get back to work soon. Just as well I work at home. Cant wait til weekend to try things.

Started today making vegetable concentrate, really worked well.
Then made lemon cake, didn't work at all. Had a look on baking powder pack, expired 1998. Quick trip to supermarket, then made another one. The best cake I have ever made, so light, brilliant.
Then onto tonight, made mushroom risotto. Never made risotto before, but have tasted lots. This one definitely the best.
Still have half left (only 2 of us) what is the best way to reheat without it becoming dry or gluggy? Made the full quantity, next time will only make half.
Now to work out what to make tomorrow!

TM arrived 7.30am this morning - friends at local postoffice - read recipe book all morning then decided to be brave and actually do something. 
Froze strawberries yesterday so decided to start with something simple. Made Fruity Dream absolutely spectacular.
Then Pumpkin Soup, twice. Dismal failure both times.
We decided pumpkin not the best (no flavour and watery). BUT didn't have any VSC. Will make some tomorrow before make anything else that needs it.
So had fish and chips tonight instead of mushroom risotto.
Tomorrow will be different, want to try a couple of cakes after making VSC and then the risotto.

Had a demo last Saturday, will receive my Thermomix either Monday or Tuesday. Decided to check this forum to find recipes.
Really needed risotto recipes, love risotto, never cooked myself because it takes too long. But now can see me cooking it quite often. Great recipes here, can see me spending a lot of time on computer.
