G'day, hope you can bear the wait until TMX arrives.  I spent the waiting downloading all sorts of recipes so that I could try lots of new things when it arrived.  And stocking up on ingredients that I'd need - lots of grains and nuts etc for fresh bread.

If strawberries are cheap where you are, buy some and chop and freeze them now.  And stun everyone with Fruity Dream from the cookbook when your machine arrives.

Today I bought whole grain from my local health shop.  They sell it in a variety of sizes, up to 5kg.  So my plan is to mill my own flour  using TMX and add some gluten flour to make my own baker's flour.

Can I make my own baker's flour using TMX?  Where would I start?  I know it can "mill" but what should I mill?

Made this the other day with strawberries.  It is divine!  At only 80c a punnet, I made big dessert bowls for 4 people for about $1.  It would be great served with a chocolate cake instead of icecream or cream.

Thanks for your help.  I made the EDC recipe last night.  Do you put that much oil in?  It just seemed really runny and oily, so after making it I poured at least half the oil back off again.

Does anyone else wish that some recipes used mls or cups instead of weight?  I couldn't weigh the oil with Thermomix because I had to add it gradually.  Is there a trick I'm missing?

I discovered the hard way with jam.  It almost boiled over everywhere.  Luckily I heard this funny banging noise and rescued it just in time.

Could this be a little tweak for recipes?  Additional information for us newbies so we don't get into strife!  I haven't seen any recipes which actually stipulate.

This was one of the reasons I am starting to make my own bread.  But if my bakers flour has it added, then I'm only part way there.  So I have to buy organic bakers flour?  Is that right?

Apparently this has been trialled in other countries (I can't remember which), and the rates of spina bifida etc increased because the pregnant mothers stopped taking the supplements.  So it had the opposite effect!

I've been making 'yoghurt cheese' instead of buying the kids cream cheese spread.  It's much healthier.

I strain it overnight through a coffee filter that sits inside a sifter over a bowl (not sure if I explained that well). 

As it's made from natural yoghurt, it can be very tart.  I mix some honey through, just enough to make it a more neutral flavour.  So this recipe adapted from Cyndi O'Meara.

I made two loaves of this last night, without the herbs.  It's a beautiful 'wholemeal' style bread.  I think this could be our staple bread recipe.  I couldn't believe how easy it was!

Custard is great, so many flavour options and really easy.
I love making anything which usually requires constant stirring like cheese sauce.  So Mornay, Lasagna, Macaroni Cheese.
Porridge is great as again, I used to be attached to the stove for 10 minutes or so, and now I'm not.

Tonight I'm trying the meatloaf recipe as I've heard it is fantastic!

Babies and Kids / Muesli Bars

Name of Recipe:Muesli Bars (adapted from Better Homes & Gardens magazine)
Ingredients:
40g dried apricots
40g dates
25g sunflower seeds
35g pumpkin seeds
25g pecans
25g almonds
65g desiccated coconut
35g wheatgerm
110g rolled oats
25g oat bran
15g sesame seeds
40g craisins or sultanas
200g unsalted butter
1/2 cup honey
3/4 cup rapadura sugar

Preparation:
Place apricots, dates, pecans, almonds, sunflower seeds and pumpkin seeds in  *:, speed 10 approx 5 seconds in bowl.
Add coconut, wheatgerm, rolled oats, oat bran, sesame seeds, craisins or sultanas in  *:, speed 1  :-: approx 5 seconds or until mixed.  Set aside.

Put butter, honey and sugar in  *:.  Cook at 80 deg, spd 1 about 6 minutes until mixture is caramelly.  Stir caramel into muesli mixture.

Press combined mixture into lined baking tray.  Lay a sheet of baking paper on top and press firmly with a flat tray to compress slice.  Allow to cool completely.  Store in an airtight container and eat within 7 days.

Tips/Hints:
The original recipe includes dried peaches, but I've never seen them and it's fine without.  You can add or omit whichever ingredients you like, but I try and keep approximate dry/wet/fruit etc ratios the same.  Eg exchange nut type with another nut etc.

You can chop the nuts etc as small or as big as you like.  My kids are still getting used to the texture, but I'll gradually make them more crunchy.

I make this recipe about once a fortnight and usually give away half each batch.

Hi everyone

Yes, the news is about folate being added to all commercial bread.  I've subscribed to Cyndi's newsletters and that's where I heard about it. 

In a nutshell, while folate is important especially during times of rapid growth, it is the forceful medication for everyone that I don't like the sound of.  I can't remember exactly what the article said, but it made me very wary.

I've also read somewhere that there has been research saying it can be dangerous for men.  I guess I don't like taking or digesting anything that I don't have a choice over.  So am about to embark on breadmaking!
