Hi,
I make these roll ups with all our left over fruit and the kids love it for their lunch boxes. Recently one of my son's teachers has commented that all the nutrients in the fruit are destroyed as a result of the cooking, and as such he is not allowed to have this as a "healthy snack". Does anyone know the affects on the nutritional value from the initial TMX cooking and then the dehydrating process? I use whole fruit with only cores or stones removed and honey for a little sweetness.
I understand there would be some nutritional loss but would have thought it would retain the majority. Thanks

I made this on the weekend with chopped apricots and they tasted great but have gone very soft after the second day and not nearly as nice, has anyone else had this problem? they were kept in the fridge until set then an airtight container in the cupboard.

I make these quite often, generally i have to fight everyone off them while they are hot but if there are any left over i tend to freeze them and warm a little after defrosting. We like them soft though so maybe a little diferent to others. The other thing we like to do is add different flavours to the dough, generally i grind up fresh rosemary with the parmesan at the start and also roll in some sesame seeds before cooking.

Has anyone tried accessing Bimby's webiste recently? I know I've tried in the past and it was fine but now it is asking for a Username and Password and won't let me access. I was planning on trying to make her gingerbread house today and didn't bother copying the recipe.

We make it quite regularly but I only cook for 7 minutes and add a couple of tablespoons of reduced water, white vinegar, salt and pepper and I've never had a failure. My eggs are always extra large and at room temperature.
