I've made this a couple of times now - so quick, easy and delicious.

It's now hubby's favourite soup  :)

Made this on the weekend - so easy to make.

I served it with steamed vegies and vermicelli noodles.

I found mine to be quite saucy as I added the chicken stock. DH and I agree that next time we would both prefer it with more chicken.

2 out of the 3 boys ate it (middle one doesn't like peanut butter).

Thanks for posting such an easy yummy meal!

This dish is so yummy. Husband loved it and its very easy to make. 5 out of 5.

I used beef fillet instead because we don't like pork very much and reduced the cooking time to 16 mins, then continued to cook the sauce for the appropriate time. The beef was a combination of medium and medium rare.

Oooh - great thread I love quotes!

Here are some of my faves:

Did anyone ever tell you that you matter? Did anyone every let you know how much of a difference you make?Did you know that even your smile can really brighten someone's day? It's not so much your accomplishments that make you great, It's the fact that you reach out from your heart. Every time you do, you are revealing your greatness,And you are helping to make our world a much better place.Thank you!

Life is DIY

The only constant is change

It isn't about how hard you hit. It’s about how hard you can get hit and keep moving forward; how much you can take and keep moving forward. That’s how winning is done!

Today is the youngest i'll ever be, better start appreciating it. It’s also the oldest I've ever been, better start acting like it

This is my favourite inspirational poem - sorry it's a bit long. I have it printed off and stuck around the place :)

Desiderata

Go placidly amidst the noise and haste, and remember what peace there may be in silence. As far as possible without surrender be on good terms with all persons. Speak your truth quietly and clearly; and listen to others, even the dull and the ignorant; they too have their story.

Avoid loud and aggressive persons, they are vexatious to the spirit. If you compare yourself with others, you may become vain and bitter; for always there will be greater and lesser persons than yourself.

Enjoy your achievements as well as your plans. Keep interested in your own career, however humble; it is a real possession in the changing fortunes of time.

Exercise caution in your business affairs; for the world is full of trickery. But let this not blind you to what virtue there is; many persons strive for high ideals; and everywhere life is full of heroism.

Be yourself. Especially, do not feign affection. Neither be cynical about love; for in the face of all aridity and disenchantment it is as perennial as the grass.

Take kindly the counsel of the years, gracefully surrendering the things of youth. Nurture strength of spirit to shield you in sudden misfortune. But do not distress yourself with dark imaginings. Many fears are born of fatigue and loneliness.

Beyond a wholesome discipline, be gentle with yourself. You are a child of the universe, no less than the trees and the stars; you have a right to be here.

And whether or not it is clear to you, no doubt the universe is unfolding as it should. Therefore be at peace with God, whatever you conceive Him to be, and whatever your labors and aspirations, in the noisy confusion of life keep peace with your soul. With all its shams, drudgery, and broken dreams, it is still a beautiful world. Be cheerful.
    Strive to be happy.

I agree Goldfish, I always set myself goals for the year ahead.

My goal this year is to be healthier by relaxing more and taking more time out for meditation :)

It was still doughy in the middle so I put it back in for a while. I used a lined round casserole dish because I didn't have a tin. I think I should have had the oven at 220, I had it closer to 200.

I love to serve this on fish

1 large roasted capsicum (or 1 jar)
1/2 tsp cayenne pepper
1 garlic clove
2 tbs evoo
1 tbs red wine vinegar
1/2 tsp cumin

Place all ingredients in tmx, lock lid and press turbo 5 secs.

Scrape down sides of bowl and press turbo again until smooth.

Add salt and pepper to taste.
