wow, this recipe sounds great and i want to make them today, i only hope i havnt given away to many zucchinis and have enough to make them!!!!!   :-\

with the glut of zucchini's atm in my mums garden, i thought i would give this recipe a go.  wow they are soo moist and yummy, the kids love these and havent a clue whats really in them ..haha thanks for the great recipe

I have never tried to ice these before, but there is no reason why you couldn't try.  I read on another thread that you were considering these or the torta caprese as a birthday cake.  This is a great everyday recipe, but if you are after something special the torta caprese is really lovely.  Just my two bobs worth though. ;D ;D

The torta caprese is the best cake I've ever eaten so it hands down gets my vote too.
I loved the brownie recipe and couldn't taste the zuchinnis at all but my children didn't like them-a big surprise!I think they were put off by the really moist texture. They'll eat zuchinni slice though so can't complain! Glad it's helped to trick the fussy eaters out there!

yes i am currently thinking caprese for big cake and these for cupcakes...just getting confused about icing combinations! Ideally I want to have a baby blue colour and maybe a baby pink too...

Just saw a recipe for Chocolate Chip Zucchini Cupcakes so might try these as cupcakes/muffins next time.

hi all

we are off eggs and wheat - just wondering what the best substitutes for this would be? i have buckwheat, millet, rice flour etc

and for the egg - i do have egg replacer but would prefer something more real if possible

I think you can use linseeds (soaked with water to make a gel) to replace eggs.  I have never done it myself but have read about it. Can you use spelt flour instead of wheat or are you off gluten?  I think most gluten free cooks use a combination of gluten free flours to replace wheat etc.

yes Judy, thanks it does - though I wish it would also say which option is best for which type of result/cooking.

chelsea i think spelt is also out but most others are ok - i might try grinding up some oats, mix with a couple of others and see what happens there..
