I've used lots of veg that was in the fridge which was added to only 500g beef mince. Was so flavoursome, really loved it.  I even added some of Judy's  dry onion soup mix to the mashed potatoes which I spread over the top.



Was that the French Onion soup mix Mixed in the mashed potato?
This looks so good. Do you have a recipe?

My soup turned out great! Hooray! Veggies were wonderfully soft and melt-in-the-mouth, lentils were cooked just right, and I chucked in a tin of pink salmon in the last 20 minutes of cooking to add a bit more texture, flavour and protein ;D

Followed by chocolate cashew cream (which I am sure I got from this forum) and banana for pudding.

Dede, here's a rough recipe of what I did today.  You can use any veg that you have, good for using up bits and pieces. I also added some tomato pizza base sauce that I had left over from the other day which was lovely.  Use anything that you think will enhance the flavour.


COTTAGE PIE
about 500g beef mince, premium heart smart quality
1 onion, quartered
2 cloves garlic
6 or 7 mushrooms, sliced
400g tin chopped tomatoes
about 1 tsp sugar
Heaped tsp Dijon mustard
Good slug Worcestershire sauce
Dash soy sauce
Good slug red wine          
1 stick celery, cut into chunks
1 large carrot,       “        “            
Head of broccoli incl stem, cut in chunks
About ˝ of a sweet potato, peeled and cut in chunks                              
Beef stock, used 1 ˝ cups today
Sprinkle of Tenina’s chicken stock granules
Cracked black pepper

A couple of spoonfuls of Dry Onion Soup Mix (JudyD's recipe)
Creamy mashed potatoes
Tasty cheese (optional – I didn’t use today)


Add about 1 tbsp oil to TM bowl.
Add onion and garlic to bowl.  Chop 2 secs/speed 5. Scrape to a plate.  
Place rest of veg in bowl and chop about 12 secs/speed 8. You may need to stop and stir with a spatula and then carry on.  Remove to a plate.

Heat a large casserole pot, scrape onion/garlic mixture into pot and gently fry onion and garlic until golden and tender.  
Add mince and using a wooden spoon, break up any chunks and cook until browned.
Add mushrooms, cook stirring until they start to cook down releasing some of their juices.
Add tin of tomatoes, Dijon, sauces, sugar and red wine.  Give a good stir, then add the chopped up veg and beef stock, ground black pepper and bring to the boil.  Reduce heat, cover and simmer for about 1 hour, adding some frozen peas, (added peas & corn today) in the last few mins.  Check seasoning.

Meanwhile, boil some potatoes until tender, drain and press through ricer (or use masher) back into the hot, dry pot.  Add some warmed milk and butter and stir with wooden spoon until butter has melted and potatoes creamy. Add a sprinkle of the dry soup mix and stir to combine.

Spoon mince mixture into individual baking pots,(or one large dish if prefer).  Spread with mash and sprinkle with cheese if using.  Place under grill until cheese has melted/or potatoes have turned golden.

Use any veg that you have in the fridge at the time, zucchini, corn, potato, sweet potato just to name a few.

Julie, that sounds lovely. I'm exhausted as I've been at the school working bee all day cleaning and painting. The best I could do was steak sandwiches for dinner. The steak was fabulous so dinner was delicious and just what I needed.  I tried to make gravy for my DH so I googled a recipe. It was a complete disaster. A vital step in the recipe was missing- I was too tired to read the recipe first and realise that it would never work.. It missed the step of sauteeing the onion and garlic and adding the flour before the liquid.  It wouldn't thicken and tasted like raw onion. Uugh. Serves me right for not using a recipe from this forum. Just too ztired

I would eat baked beans on toast every night.

We had black snapper and chips made in the Easy Cook tonight. We went out fishing and caught 2 black snapper (they are a type of bream) and 1 cod. Not too bad for an afternoons work fun.
May all dairy items in your fridge be of questionable vintage.
