Bread crust

Are there any tips to on getting a softish crust on your loaves (especially something like the five seed loaf).  My basic white is quite good so I guessing its got something to do with cooking length.

I splash water over dough so the heat takes that moisture and not out of bread.  ;)

Place a clean tea towel over the bread when it is on the rack cooling
