MC on or off??

Hi everyone, I posted this question in another area - I think it should be here. Can someone tell me the rules!! (if any) when the MC should be left on or off during cooking. I take it off when sauteeing but don't know what I should do at other times. I think the rule is when you want to reduce the liquid you leave off but sometimes that isn't always obvious in the recipe. Could someone please let me know a simple 'rule of thumb' so that I can apply it to all recipes. Thanks

You've pretty well got it worked out there korrick.  Recipes will generally say when to take it off, if not then it is on. I sautee with it on and take it off to reduce the liquid & also have it off for beating egg whites to incorporate some air into the mixture.

Ditto.  Judy can you do egg whites in the TMX now? Clever lady. I'm too scared to try.

Yes Cookie, the heat method works for me. Butterfly in/37o/speed 3.

I have some egg whites if the freezer left over from icecream so I'll have to give it a go. May not be until we get back from Melbourne as I have a sourdough class on Saturday and I'm going to Tenina's class on Tuesday night.

My MC was mainly off a few months ago because i could never find it without my glasses on, since then i have paint red dots with nail  polish so now i can see it without my glasses  ;D

I have no trouble finding the MC but I do have a problem locating the glasses.  Don't suppose the red dot would work there though.

well yes i have green glasses which are easier to find than black or brown ones , my next pair will be bright yellow

there's a standard list of photos in the profile section of this forum - i picked it from there, so it is possible to have several members with same photo. I have inserted another photo so there shouldn't be any more confusion. :)
