Gorgonzola & Ricotta Sauce (with photo)

Gorgonzola & Ricotta Sauce

Ingredients: (for 400-500g pasta)

170g gorgonzola
200g ricotta
100g milk
Salt
Pepper
Grated parmesan

Preparation:
    * Put all the ingredients except parmesan in TM Bowl and mix for 40 seconds on Speed 6
    * Mix sauce with boiled-drained pasta
    * Serve into plates and sprinkle with parmesan

I really like the look for this sauce, but dislike gorgonzola / blue cheese - would this work with some other sort of cheese or do you need the taste of the gorgonzola?

Well Cuilidh.. If you don't like any kind of blue cheese what I can say wouldn't exactly be a substitute and it would taste differently
I thought like what would I do if I were you... ??? :-))
I guess I'd use 100-120g of feta and the rest philadelphia. I've never tried though
And as I said before, it wouldn't be a substitute

Camembert or brie cheese with a tablespoon of sour cream

Thanks for the suggestions. I had thought of camembert / brie but hadn't considered the addition of sour cream.  Farfallina, I was pretty sure that the 'blue' part of the cheeses comprised a huge part of the taste but thought I would ask anyway.  I think I may just try fundj's idea and see how that goes.

A young Asiago cheese pairs beautifully with ricotta - or you can also use one of sheeps milk  feta - wash the brine off well and don't use any added salt in the recipe.

I have a friend who simply can't stand blue cheeses (heretic  ;D)  so I use the Asiago combined with other cheeses when I have to substitute.

This sounds yummy!

Could you add other things into it as well? Such as an onion, bit of garlic and some shredded ham or something? Would that cook in the sauce ok?

Yes you can,
This is what I would do
Steam up some broccoli and sown peas(keep warm)

 or fry some ham and peas with a little butter (keep warm)

Then fold through the cheese sauce

There is no cooking of the sauce it will heat up when you mix it with the hot pasta

I made this for dinner tonight and sauteed some onion and shredded ham before doing the sauce and it was so good! Definitely going to cook again :D
