One of my colleagues at work has bought in a big bag of persimmons ... has anyone got any good persimmon recipes, sweet or savoury?

Lucky you Marina, they are my favourite fruit. Thanks, Judy, I will go through the recipes on the link (I forgot to take the persimmons up with me this weekend.  Hopefully they will still be at work when I get back).

Yesterday I made these persimmon, walnut and white chocolate cookies using a link that Judy posted (used dark chocolate instead of white as DH cannot eat white chocolate).  I think I put a touch too much nutmeg in, but they turned out well and tasted lovely.  I only needed two persimmons  https://www.persimmonsaustralia.com.au/project/persimmon-white-chocolate-walnut-cookies/

I knew you’d find something from that site Marina. It looks like they’ve added more persimmon to the top once cooked but I’d prefer the fruit to be inside the cookie. Is my assumption right?

They sound tasty Marina. I would maybe add apple or similar instead of persimmon.

I think your assumption is correct Judy - most of my persimmons fell to the bottom of my bowl so I added some to the tops as well!!!

Cookie, any of those fruits would work (just watch the quantity of nutmeg!)  Cranberries and dark chocolate would also be a great combination.

Whatever you do, it is a nice and easy recipe and the biscuits / cookies don't spread much either.
