Quirky Cooking

{Newsflash for my UK friends!} Quirky Cooking is coming to the UK! (yippee!!)
I'll be travelling in the UK in May and will be holding Quirky Cooking classes, seminars and hands on workshops, so if you live in the UK or have friends over there, here's the details of where I'll be and when! Feel free to share! (Click on the 'descriptions' tab at the bottom of the spreadsheet to see what each class/seminar/workshop involves, costings, etc.)
Some of the classes are ready to book into, a couple of the workshops are already sold out (sorry!) and the rest will be up on Eventbrite soon. This spreadsheet will be kept up to date, so check back for places that interest you.

Non Thermomix Recipes / BEEF VINDALOO (Can be done in Slow Cooker)

So inspired by Katiej's recent Curry Night Menu!  I did a bit of googling to find a suggested recipe for the Beef Vindaloo and found this. . .

Excellent suggestions there re preparing ahead, slow cooker or oven,  freezing, etc.

There was a reference to  Bangalore Phall - something I'd never even heard of . . . more googling came up with

News about Thermomix / Vorwerk advises of Faulty Seals in some TM31s

Moderators, please delete if inappropriate . . Those of you on FB and receiving updates from Thermomix Australia will also see this . .

VORWERK Elektrowerke GmbH & Co KG (Vorwerk), the manufacturer of Thermomix has recently identified that the sealing ring of the mixing bowl may not function properly in a small number of Thermomix Model 31 (TM31) appliances.

In rare circumstances, if a potentially affected TM31 is operated at high RPMs, (ie at a high speed of four or above) when pureeing and then is immediately switched to the ‘lid open’ position, there is a possibility that liquid or food may splash out of the mixing bowl. This could lead to a scald or burn.

The issue may occur in only a small number of appliances manufactured between October 2012 and May 2014 and have a service number within the range of 124231xx – 142031xx.

Vorwerk has advised that customers can continue to safely use any potentially affected appliances, by following these simple instructions:

Operating Instructions:
1. After using speeds of level 4 or above, turn the speed selector down to level 1.
2. Leave the speed selector on level 1 for three seconds.
3. Turn the speed selector to 'open lid' and carefully open the lid.

Further Information:

In Europe, Vorwerk has provided the operating instructions (set out above) to customers, so they can continue using their TM31 safely. Vorwerk will also be replacing the sealing rings of all potentially affected appliances.
Vorwerk is liaising with the Australian Competition and Consumer Commission (ACCC) about the course of action to follow in Australia. Vorwerk will keep Thermomix in Australia and customers informed.

Service Number: For customers to determine if their appliance may be affected, customers can refer to the service number, which is found underneath their appliance. Please see the diagram attached which highlights the service number.

Cakes / Rich Chocolate Cake GF/Grain free/nut free/10 eggs!

This caught my eye in a recent FB post - with my backyard full of chooks (just seems that way at times . . ;D ;D) the fact that this cake uses 10 eggs at a time is really appealing . .  ;)  I haven't tried it yet, but it'll be soon with the chickens picking up their "Hey! it's spring!" egg count. . .

I was led to this on FB  . ..  sounds a super idea if weekdays are super hectic or, if you're like me whose habits have changed a little over the years.    I find these days, it really is an effort to pull a meal together in the evening, whereas it's in the morning that I'm more productive.  Interesting how things change as you get a little older.  I used to be a regular night owl - but now I'm more like my fine feathered friends in the chicken coop!

I haven't made these (yet) but just a heads up to those who don't use FB

On Jo's Quirky Cooking Chat, she posted the following correction . . . for those who have the book, you may want to mark the difference before you forget! ;)  There are some (small) differences between the blog and book recipes.

This recipe is both on my blog and in my book, but if you're using the book recipe, please use 90g nibs not 290g!!! Unless you're a hardcore chocoholic. (Not sure how that 2 snuck in - sorry guys!!)
- Warning: If you eat these just before bed time you may find they keep you awake! But they're great for an energy-boosting snack during the day

Cakes / Biscuit Baking Tips - Dan Lepard - ABC Radio

While I was driving this afternoon and listening to the ABC, this great little snippet came on - Dan Lepard giving some tips on "making better bikkies."    Lo and behold, you can listen to it here . . .

Basically, his advice was . . .
1.  Be prepared! (for when you need/want a biscuit ;D)
Get your dough and roll it into a cylinder, wrap in paper (I'm assuming baking paper) and/ or clingwrap, and pop it into the freezer.  When the need arises, remove the dough from the freezer, slice off however many biscuits you need and pop them into a cold oven , keep an eye on them and when they're golden around the edges, remove them from the oven and allow to cool.  He says to put them into a jar if you must, but eat a couple right then and there as they're better when freshly baked.

2.  "A little bit of science . . ."  There's no need to cream butter and sugar together before adding the egg(s). ("Not for bikkies!!" - he says . .)  Put it all into a bowl and "beat and beat and beat!" until it all comes together.  Sometimes, if it looks as though it's going to split , just add a spoonful of flour.  He suggests that even adding a little bit of flour right at the beginning makes the taste even better . . . .

3.  Play around with Sugars - particularly the Muscovado sugars
e.g., Anzac Biscuits - Try replacing 2 Tablespoons of the flour with some of these dark, unrefined sugars - will give better flavour and have "you winning prizes . . ." ;D

Jams and Chutneys / Quince Chutney /Quince & (other fruit) Chutney

There is a Quince group that becomes more active around this time of year.  Recently, one very fortunate lady posted that from her one (Smyrna) tree she was able to process 18 jars of jelly and 19 preserving jars of preserved quince fruit pieces.  :o :D She was also keen to try a chutney and this was a suggestion for her.  I thought other quince lovers might like to check it out . . . :D
