Festive Seasons / Re: Salted Caramel Fudge
« on: December 18, 2013, 12:55:23 pm »
I made a batch on Friday with glucose syrup, no golden syrup and 22 minutes. Turned out perfectly.

Tried yesterday with 1 tbsp of glucose, no golden syrup and 22 minutes. Very disappointed. Fudge just wasn't sweet. Which meant that the salt was very overpowering.

Gosh, I find this fudge very sweet and I have quite the sweet tooth!  Did you use both the white chocolate and brown sugar?

I believe so. :)

So, 1 tbsp of glucose is the same as 2 tbsp of glucose syrup?

Thanks Goldfish for the bump.

As per my other thread, it seems very rich, especially with 1.5x , making 600g of dark chocolate.

I'll probably give it a go, but I think I'd like to try with sugar vs chocolate.

Thank you Judydawn. I was just a little worried about the large amount of dark chocolate (think it may be a little rich for Tracy).

I'll give it a go tomorrow (did three attempts last night, 2 R&R and 1 salted but using glucose rather than glucose syrup and I was disappointed).

Recipe Requests / Rum & Raisin Fudge
« on: December 16, 2013, 11:05:18 pm »
Hi all

Anyone had much success with Rum & Raisin fudge?

I've had great success with salted and sweet fudge. But I'm struggling with rum & raisin. Not sure if which "base" I should use. I'm not really a fan of R&R. So, not sure exactly how it should taste. But my darling wife likes it!

Any suggestions are welcome.

Thanks
Stew

TM = 885
TM package = 2nd cooking bowl, blade, whisk and spatula = 1094

So, it's 209 more. But from the sounds of things it'll be worth it.

Thanks for the messages so far :)

Evening all. I'll do an introduction post when I get chance (this week). My wonderful wife and I have decided to spend some of our wedding gift money on a Thermomix. Just the two of us at home, no kids yet. Hoping it'll make cooking more accessible as we are both professionals with stressful jobs.

Question is whether the Chef's Package is worth the additional 200. How often does your second jug get used? Tools any good?

Thanks in advance.
