Raspberry salad dressing

This is based on a dressing recipe I got from Andrew Fielke in 1987 when he was cooking at TallyHo Lodge in the Adelaide Hills

Put 1 clove garlic and the equivalent of 1 tablespoon red onion in the thermomix and chop at speed 7 for 5 seconds

Insert butterfly

Add:

Freshly ground pepper
Salt
200 ml raspberry vinegar
1 tsp dijon mustard
400 ml oil - I used rice bran il tonight but the original recipe had olive oil

Blend at speed 4 for 1 minute

bottle up and enjoy!

This would make a salad really something. I'll certainly try it.
May all dairy items in your fridge be of questionable vintage.

Is raspberry vinegar available at the supermarket?? I have to confess I have never seen it and I would like to try this one too - we like a nice dressing on our salads  :)

kathryn we get it here in the vinegar isle but in the gourmet vinegar section so in oz i imagine it would be in a deli but probably better if someone IN oz answered lol...going to make this up today for the weekend.. :)

Never got around to making this before we left but Will try it when we get back... Already git thé vinegar!  Thanks jd for thé link... I havé heaps of raspberries growing in m'y garden and they Will be ripe very soon... Another good use for them  :)

It makes just over 600ml and will keep for 3-4 weeks in the fridge

To my surprise, I found some raspberry vinegar in the supermarket, and put it into my trolley.  Not until the queue for the checkout did I think to read the ingredients - and I was appalled to see that it contained artificial red colouring and artificial raspberry flavouring.  Not even any genuine raspberry in it.  Needless to say, it went back onto the shelf, and I will eventually get around to making some myself, thanks to judydawns link to a recipe.

I made this tonight to dress a salad.I didn't have any red onion so used a spring onion instead.It emulsified beautifully and I really enjoyed it.It does make rather a lot but I will take a bottle to a friends tomorrow so she can enjoy such a lovely dressing as well.Thanks for the recipe MBM :-*
